3 Things Thursday

Ready for a random story with no real point? Good. Here we go. We had a discussion a couple weeks ago at work about weird, superfluous (<— Sean would be mad at me for using such a “big” word) phrases that people use, like “not gonna lie” which had me cracking up and reminded me of how Sean and I used to get SO annoyed when people would say “to be quite frank” or “frankly”. We would always just insert a random name instead of frank when we were talking and would end up saying, “to be quite rachael” or “to be quite sean”. Which is totally normal, promise. Then I almost went to use to open this post with “not gonna lie” and I had to chuckle and delete it. Unnecessary story FTW. Moving on…

1. I made this recipe earlier this week and it was a freaking slam dunk. Sean raved about it for days. If you’re looking for a good soup recipe, TRY THIS ONE.

definitely not my picture because I am not a food blogger. and mine didn’t really look exactly like that. still not certain how Cooking Light gets all their dishes to look so pretty.

I followed the recipe almost to a T, except that I didn’t use a green pepper because I bought the three-pack of peppers that comes with red, orange and yellow. It was still delicious. Oh and I also didn’t use queso blanco because I’m not sure I’ve ever had it before so I didn’t know if I’d like it (let’s be honest, it’s cheese, of course I would). So I used shredded colby-jack cheese instead, which is one of my favorites. Make this ASAP. You won’t be disappointed.

2. I’ve been on a roll with dinners this week and last night I made this pork with roasted apples and onions recipe.

The only change that I made to this recipe is that Sean and I added a fried egg to it. Sounds weird, I know, but it was amazingly delicious. I was super hesitant about making this because Sean can be a little weird about fruit mixed in with dinner, but he was giving out compliments left and right about this one too. Sometimes I forget how much I like pork, and this just resolidified that I should probably be making it more often than I do.

3. Those are the only two dinners I’ve made this week, so that’s really all I’ve got. Other than that I’ve had a few mediocre runs, one good hot yoga session, and I’ve worked a lot. Exciting stuff, I know.

Oh wait, I do have one gripe for all the cyclists out there: I know that you are all out there trying to log miles just like us runners, but PLEASE do us both a favor and yell out “on your left” or “on your right” if you’re coming up behind a runner. I don’t wear headphones when I run for this very reason, but I do tend to zone out, and yesterday I almost got hit twice because I had a cyclist zoom past me without alerting me that they were there. It’s just common courtesy, and I don’t want to put myself back on the injured list any time soon because I got hit by a bike.

Any new recipes I should try? I had a BIG recipe fail a couple weeks ago so I’ve been sticking to safe stuff til this week. Now I’m feeling experimental again, so send them my way!

Mexican Tortilla Lasagna

Last week I was contacted by some folks in regards to trying out a lasagna recipe from the website www.mydish.co.uk. Um, I love trying new recipes and I can never turn down lasagna. Who can? (please don’t answer that if you can turn it down, we might not be able to be friends).

I am always looking for new recipes, so I was definitely intrigued. Though the whole “grams” instead of cups and ounces thing threw me off a bit. Nothing Google couldn’t fix though. Smile Before committing I trekked on over to the website to check out what they had and that’s when I stumbled upon a recipe for Mexican Tortilla Lasagna. Say what?! I had never even thought about putting a Mexican-flavored spin on lasagna before, so I decided to give it a go. Best.decision.ever.

When I was making out my grocery list on Friday evening (don’t judge at how wild my Friday night was) I saw that the recipe called for creamy lasagna sauce and I got a little worried at how that was going to fit into the meal… Creamy sauce in Mexican food? I don’t know… However Target really pulled through on that one when I found these:

Roasted Poblano Alfredo? Now that sounds like it’ll fit into a Mexican-themed lasagna to me! Coupled with Spicy Red Pepper tomato sauce? Classico, you and your flavors are awesome. Oh and in case you’re wondering, you definitely need a Shock Top Pumpkin Ale to keep you company while you’re cooking Winking smile

Since I can’t follow any recipe exactly as it is, I threw in these spices while I was browning ground turkey (I rarely use ground beef when I’m cooking). I use these with just about everything:DSC01115

 I seriously can’t live without any of those spices. Delicious. I also added fresh jalapeno and a Serrano pepper to the ingredients in place of the red or green chili that it called for and then I passed these over to Sean:

Sean is a master vegetable chopper. Seriously. I don’t know how he dices so well, I have little patience with that stuff. Which is good because he gets mad when I chop up things without telling him Smile

After all that goodness was done I started layering and quickly realized that I had enough for not one but TWO pans of the lasagna… a good thing if the recipe turned out good, a bad thing if it turned out bad…

In hindsight, this was not the best idea because they spent the entire rest of the night meowing at the back door to be let out again.

I didn’t hear the timer go off (I was too distracted trying to beat Sean in washers. Fail.) so the cheese on top was a little brown.

BUT that didn’t stop it from being absolutely delicious. We added pickled jalapenos (definitely didn’t need them – it was plenty spicy without them… which is saying something because Sean and I add jalapenos to meals any chance we get!) and I added salsa. Holy amazing.

You HAVE to try this out. The creamy poblano sauce definitely gave it a lasagna-y taste but in the best way possible. And it was super easy to make too. Especially when you bribe a boy with beer to help you Winking smile

Have you ever gone into a recipe skeptical but then had it come out amazing? What about awful? I tried to make a chicken dish one time and completely missed an entire step. It was terrible. Thankfully, this one turned out MUCH better!

Stuffed Peppers

OK, first off, the spam comments on my site have quadrupled overnight and they are CRACKING me up. I think I shall dedicate an entire post one day soon to some of the most ridiculous comments I’ve gotten.

On the whole I don’t really share a whole lot of recipes on here. It’s not because I don’t cook (I do! I love to!) but it’s more because if I get something off Cooking Light (my recipe haven), I generally follow it pretty closely and I don’t really feel the need to slap up a recipe on here that looks like I came up with it when in reality I printed it out and checked off each step as I went.

However occasionally I will break out of my recipe-loving rut and create something on my own. That happened last night and as we were eating I got a “Babe, this is DELICIOUS” from the husband. Since his comments are normally confined to “this is really good” or “no, it’s OK” or some variation of those, the enthusiasm in his voice made me perk up and think I may be on to something. And if I’m on to something then the only natural thing to do is share it with you guys, right? Thought so.

Without further ado, I give you the brilliance that is stuffed peppers. To start, you need a fridge full of produce that you have no clue what to do with. Because that’s how this recipe started.

This recipe makes 3 stuffed peppers and will have a little bit of filling leftover on the side (i.e. I made enough for dinner last night, lunch today, and some to throw onto a salad or some rice later this week).

Stuffed Peppers

You’ll Need:

- 3 1/2 peppers (I had 2 1/2 red peppers and 1 green pepper)
- 1/2 onion
- 1 celery stalk
- chives
- corn (mine was frozen sweet corn, about 1/4 cup)
- fresh spinach
- 1.2 lbs ground chicken (mine was clearanced at Randalls… don’t judge)
- cayenne pepper to taste
- chili powder to taste
- cumin to taste
- salt to taste
- salsa
- jalapenos
- shredded cheese

To Make:

1. Preheat the oven to 350
2. Boil a massive pot of water
3. Cut the tops off of the 3 whole peppers and scrape out the insides
4. Dice the onions, celery, chives, and 1/2 pepper
5. Brown the chicken over medium-low heat for about 3-4 minutes, then add in all your other veggies (except the ones from step #3) and season with cayenne pepper, chili powder, cumin and salt.
6. Let cook for another 5 or so (chicken should be mostly done).
7. When the water is boiling add in the peppers and let them boil for 5 minutes (<— important)
8. Add in some cheese to the chicken and veggies and let it melt into it (SO GOOD)
9. Remove your peppers from the boiling water and line them up on a baking sheet
10. Stuff them with the chicken-veggie mixture and then top with more cheese (obviously)
11. Bake for 15 minutes at 350
12. Top with salsa and jalapenos and ENJOY.

So easy. So good. Right up my alley.

Please don’t be jealous of my superb recipe writing skills. You should know that I had two almost empty bags of Italian shredded cheese that I dumped into the chicken-veggie mix to let it melt (probably 1/2 cup total) and then I topped it with Mexican cheese. I am trying to clear out the refrigerator of anything and everything :) Also, when I said that boiling the peppers is important, it is. It makes them soft but sturdy, if that makes any sense. You can cut through it with a fork. Naturally, before I could take a picture of the finish product I smashed it all up. So this is what it looks like when it’s done all smashed up… you’re welcome:

This is one of the easiest recipes I’ve ever made and it really was quite tasty. I had the other pepper for lunch today and forgot to bring extra salsa and really wished I had – having fresh salsa on the top is amazing. And the beauty of a recipe like this is that you can easily make it vegetarian or add in whatever veggies or meats or rice as you choose. I just happened to throw in what I had on hand that wouldn’t take a long time to put together.

It got two thumbs up all around in our household, which probably means you should try it. You can thank me later.

The French Quarter Cajun Seafood Grill

On Tuesday night after a ROUGH speed workout I loaded the husband into the car to go in search of iron supplements. After I successfully acquired said pills, we drove across the parking lot to try out a restaurant I’ve been wanting to try since we bought our house (that was in 2009). Tuesday was the night my friends and it did not disappoint.

We went to The French Quarter Cajun Seafood Grill and it was awesome. On their website they say that they specialize in authentic South Louisiana Cajun and Creole cuisine, which I can’t verify because I’ve never been (and if I have then I don’t remember it). I can verify that their seafood gumbo was delicious and I am very picky about gumbo.

I digress, though.

The restaurant itself is in a strip center and doesn’t look like much from the outside, but the inside is SO cute er, sets a good tone.

This picture was sneakily taken from our booth. We were halfway through our meal before I realized that I hadn’t taken any pictures, which I mentioned to Sean. His response was, “I’m sure you’re about to fix that”. Darn right.

The whole restaurant was dimly lit and they had these painted sections (as seen in the above photo) that had brick peeking through and vines and such. Normally, I don’t like that kind of stuff, but here it fit well and I (clearly) was a fan.

I skipped the garlic bread but Sean said it was good. I imagine it was like every loaf of buttered garlic bread, but I wasn’t in the mood. We ended up ordering 2 dozen raw oysters (one of Sean’s favorite food) and I ordered a bowl of gumbo and Sean ordered a cup.

I mentioned it above, but I am REALLY picky about gumbo. I like it to be spicy, I don’t like when the rice is pre-mixed in, and I like there to be lots of seafood. Pros about French Quarter:

1. The rice comes on the side. I always feel like they put WAY too much rice in and I like to add it in myself or skip it all together.

2. There was tons of fresh seafood in it. Delicious.

3. I have no idea if it was spicy or not because I doused it with hot sauce immediately.

As you can see, I was about halfway through it before I realized I had zero pictures. Oops. It was good.

Sean is a BIG fan of raw oysters. I am too, but the boy REALLY loves them. So when I said I was going to order a half dozen, he said we should just order two dozen and he’d eat the rest of mine. I switched this to I’d have nine and he could have 15 and we called it even.

I know oysters are hit or miss for people, but these were pretty good if you like them. They were a tad on the salty side, but what can you really expect? If you hate spicy food you would HATE eating with Sean and I because we like everything as spicy as we can get it. When they bring out oysters and give you the side of cocktail sauce and the side of horse radish, we both typically use all of the horseradish and then add in some hot sauce. I add hot sauce to just about everything, actually. It’s delicious.

Yep. We ate everything. And it was awesome. SO if you live in the Cypress/Houston area and you like cajun food, go here. Their menu was huge but Sean and I are notorious for sticking to oysters and gumbo at these kind of places. All in all, we were definitely impressed and will definitely be back.

Fan of cajun food? Seafood? I am a fan of all food. There is no discrimination here.

Kilburn’s and the return of St. Arnold’s Oktoberfest

Last night… no no, wait… yesterday in the late afternoon Sean and I decided to finally cash in on some buy 1 get 1 free drink coupons I had for Kilburn’s, which is a little tavern and grille close to our house. It’s a fairly small tavern that has a very comfortable and “Old English Tavern” vibe to it. Sean and I were easily the youngest people there and it seemed like a lot of the patrons were regulars.

We started off by splitting an order of chips and salsa. I’ve decided that I think blue corn tortilla chips taste better than the white ones. I don’t know why – I think they’re thicker. Delicious. The salsa was pretty good – not outstanding – but still good. It wasn’t spicy, which I think is why neither of us thought it was great (we like our salsa to have some kick to it!).

When I went to order my beer – St. Arnold’s Summer Pilsner – something magical happened. Our bartender told me that the Pilsner was off the menu now and that OKTOBERFEST had returned! I was a very happy person after that. You see, last year when Oktoberfest came out, we picked up a 6 pack of it having never tried it before… It was the only 6 pack we got because it sold out ridiculously fast.

For eats I ordered the grilled chicken sandwich with homemade french fries. The sandwich itself was all right for bar food. The bread was a little overwhelming – there was so much of it! I only had half the sandwich and the fries. The fries stole the show in my opinion, they were awesome.

Sean went with the pulled pork sandwich with fries. He said it was pretty good. That’s about it. He’s a stellar food reviewer.

The verdict: their portions are HUGE. Even our bartender said that it was better to split a meal. He also told us that the next time we come back to get the fish and chips (and split it).

All in all, we had an enjoyable time and will be returning. I love local restaurants and bars, and this was no exception.

 

 

Busy Weekends!!

That is such a lie.

But I somewhat feel like I did have one… Ok, that’s a lie too. The busiest I got was taking two naps on Saturday and two naps on Sunday. And this is going to be a long post because I’m feeling chatty so get ready!

First, I have to talk about dinner on Friday.

We met my parents for dinner at BJ’s, which is easily one of my favorite places to eat. I have been craving a mojito for a while now, so I almost jumped for joy when my mom said she was going to order one. Go on ahead and get me one of those bad boys too!

We started off by splitting the Thai Shrimp Lettuce Wraps and the Avocado Egg Rolls.

Sean was obsessed with the Avocado Egg Rolls (to the point he said we need to make them at home… yeah, let me get right on that…) but I thought the Thai Shrimp Lettuce Wraps took the cake. SO SO GOOD.

The above picture does no justice. I was trying to be creative and failed. I followed the appetizers with the Seared Ahi Tuna Salad (though I skipped the crisy wonton strips). Then I died and went to heaven. I LOVE seared Ahi tuna and this was no exception. There wasn’t one bad thing about this salad. Usually I order dressing on the side, but I didn’t this time and I don’t regret that decision one bit.

I also ignored Sean trying to tell me to not take pictures and snapped away. You’re welcome.

Follow that with another mojito to keep the conversation going before wrapping up the night. I really like my parents as best friends and as parents, and love spending time with them. Since the past couple weeks have been so hectic, we haven’t gotten together with them in a while, and I’m glad we made the time to do so Friday night.

We trucked over the B-Dubs afterwards and met up with Sarah (coworker/bestie) and then went to Stats for a bit before I rounded up Sean and we went home and I ate the rest of the ice cream in the house (sorry, hon).

I woke up with a headache around 8:30 Saturday morning that never went away. To counteract this I went back to bed at 10:30, got up at 11:30 and moved back to the couch, took another nap around 12:30 and finally got moving around 2… Oops.

I kept debating working out and what I wanted to do (I had 7 miles to get in over the weekend and some cross-training) but nothing sounded appealing other than running. And not running the 7 miles.

So I did something I haven’t done in months. I ran for the sheer joy of it. I ran because I love running. I feel like over the past couple months I’ve gotten so wrapped up in training that I forgot why I started training in the first place. Sure, it’s because I want to run a marathon, but more importantly it’s because I freaking love it. So I got in a little over 5 miles of my favorite kind of speedwork. And it was GLORIOUS.

The couch was calling my name after that, so I happily obliged until it was time to meet up with Sarah and her fiance Kenneth to go to the Stevie Nicks concert. Suffice it to say, I still had a headache, but it was fun to go out with them and to do something different than the norm. Sean and I went home and to bed afterwards and I slept like a baby.

Sunday I got up with every intention of doing the 7 miles…

I made peanut butter banana bread instead. :)

Except, when I started baking I realized something: we absolutely never use butter with anything. So I subbed in coconut oil instead.

Oh, and I skipped regular PB and used White Chocolate Wonderful PB instead (GOOD DECISION).

Way better decision than running 7 miles. I also did laundry and grocery shopped, before taking a page out of this girl’s book (er, blog?) and making my sandwich into a panini (of sorts). MMMMMMMM YUM! It was so good!

Then I took a nap. :) Sean left to go golfing, so I finally pulled myself onto the treadmill to do my 7 miles. However, I didn’t run the 7 miles at a steady pace, I started at 6.1 and every two minutes would move the speed up .1 until I hit 6.6, where I ran for four minutes before moving it down every two minutes til I was back at 6.1, where I stayed for four minutes and then repeated over and over until I was close to 7 miles. Once I hit 6.6 for the last time instead of slowing the speed down, I increased it every two minutes until I hit the 7 miles. It was the PERFECT way to make 7 miles fly by on the treadmill.

And then I took my fourth nap of the weekend. Nothing notable happened after that. I basically read, watched tv, and then went to sleep.

After having weeks of strenuous marathon training, I think my body needed a chance to calm down a bit, so I took full advantage of taking naps!

Do you ever get overwhelmed with training and just need a break? I’m so glad I had a lighter mileage week this week. I needed to rediscover why I’m putting myself through all this again!

Vegas DAY FOUR

I’m almost done, I promise. I’ve had some very exciting things happen this weekend that I’m anxious to tell you about, but it will have to wait just a tad longer. :)

That smoothie was made with fro-yo. It was one of the best smoothies of my life. There is no exaggeration in that at all. Tosha and Daniel had a cabana at the pool rented out for the day, so we spent the afternoon soaking up some sun and enjoying the company of our dear friends.

I really like him.

Boys, boys, boys.

As much as I despise the elliptical, I had a 45 minute date with it after our pool day. And really, it wasn’t so bad since I had this audiobook to keep me going:

After that we got all prettied up to go to the rehearsal dinner.

I am in love with that dress. It was a $19.99 Marshall’s steal that I bought the day before we left for Vegas and I am so glad that I did. Win.

I’m not even sure how to accurately describe dinner. It.was.divine. We had dinner in Mandalay Bay at Aureole. If you ever stay at Mandalay Bay and you are looking for a nice restaurant to go to, GO HERE.

When you first walk in there is a staircase that wraps around a gigantic glass wine cabinet that goes from top to bottom. The following pictures do absolutely zero justice to the amazing design of this:

Apparently they have wine “angels” that fly up and down on mechanical hoists. You can read about it here on their website, but basically it was inspired by the movie Mission Impossible. Which I think is pretty rad.

When we got downstairs we were greeted with glasses of wine and menu options, plus the cutest little pretzel roll that I about died over.

Everyone was a really good sport about my photographing all of our food.

I started off with an organic green salad with a basil orange vinaigrette. It was light and fresh and I loved every bite.

The real star, though, was Sean’s appetizer, which was three cheese ravioli topped with snow crab.

We both ordered the wild Alaskan salmon for our entrees, which came with lemon smashed (why is it not mashed?!) potatoes, asparagus, and spinach coulis.

Being the lady that I am, I finished every last morsel of deliciousness on that plate. It was so good.

We rounded out our meal with warm molten chocolate cake accompanied by blackberry cheesecake ice cream berry compote. I also finished every last bite of that. Because we were in public I refrained from swiping the bowl with my fingers, but the thought did cross my mind once or twice.

Once we finished dinner we changed into more comfortable clothes and everyone went to O’Shea’s to gamble. We were a little burned out on losing money, so we paired up with Andrew and Lindsay and walked the strip. Seeing all of the hotels at night was so pretty! There are a ton of pictures from that little excursion, but I’ll leave you with my favorite:

Have you ever had blackberry cheesecake ice cream?! What’s your favorite ice cream flavor? It was one of the most delicious flavors I’ve ever eaten. I really like blackberry fro-yo too. 

Vegas DAY THREE

First and foremost, I ate a ton of Mexican food yesterday for lunch (nachos) and felt horrible for the rest of the day. Sometimes I forget that there’s a very good reason I stay away from super greasy food – my body rejects it. Therefore, I didn’t work out at all yesterday which resulted in me eating a huge bowl of ice cream (because clearly guilt doesn’t hold me back and clearly that’s the best response to already feeling bad).

I paid when I woke up this morning, I felt AWFUL. I did however get up and do my 6 mile tempo run this morning. Now, usually I do tempos and speedwork on the treadmill because I can control my speed. But someone got it in their little head this morning that they didn’t want to run on the treadmill. So I ran it outside instead. My times were great, especially when you factor in that I stopped my garmin the three times I decided I had to walk because I was just going to die otherwise (I told you, no extra dramatics here at all).  Needless to say, it’s over and done with and I’m looking forward to tomorrow because Britt and I are going to do our long run together so at least I won’t  be suffering alone.

HOWEVER since I know you’re all just dying to continue to hear about my Vegas vacation, onward we go. We’ve already covered days one and two, which brings us to day THREE: Thursday! This is the day that the bride and groom actually got to Vegas which can only mean one thing: bachelor and bachelorette parties :)

But before all that good stuff, we had to go on some day trips, obviously. The main focus of our day was spent walking around PH because our friend Andrew likes to go to brewerys’ and there was a local brewery that had a little watering hole in PH. Which is how we ended up here:

We will ignore that I drank at least half of each of Sean’s beers and just didn’t order my own. Not important.

We didn’t do much noteworthy after that until the bachelorette party. At least, nothing we took pictures of so it probably wasn’t noteworthy.

I did an absolute 100% FAIL and didn’t take a whole lot of pictures. I know, I KNOW, what the heck?! I don’t even have one with the gorgeous bachelorette :(

And I’m tired of editing pictures so that’s all you get. We followed Dick’s  by going to see Thunder From Down Under, taking a limo ride, and then meeting up with the guys.

Zombieland V. 1.0

No sleep = Zombie. I didn’t sleep at all last night.

I did a k.i.l.l.e.r speed workout on Tuesday after work. And I was so.happy. There was no sarcasm in that last sentence. If people looked into the window of my makeshift workout room they probably would have thought I was a huge creep. I was running along at level 8 on the treadmill anticipating when I would have to bump it up to level 9 and for whatever reason it was just working right then. I had a huge, goofy smile on my face and every now and then I would pump my arms in enthusiasm.

I have no good explanation. It was just a phenomenal five miles of speed work. I also had a great run Wednesday and a fair strength workout today. But those are not worth mentioning right now.

In other good news, I can not stop eating that stupid wedding cake. And it is never ending. For such a small circle of cake that is left, I don’t get how Sean and I are still able to eat it every.single.night.

But that’s the boring news. Let’s get on to the exciting news.

YAYYY CHOBANI!! THANK YOU SO MUCH FOR SENDING THIS TO ME!! You are officially the love of my life. Sorry Sean, you lose out to INCREDIBLE Greek yogurt. And no, you can not have any, just stay away from the second shelf of our fridge!

I cleaned out the entire fridge right then just so I could dedicate an entire shelf to my soul mates up there. I wish I was joking.

Since I was home alone last night while the hubs was at softball I decided I would take a page from Hungry Healthy Happy:

And just to make her happy, I even sat down at the table, just like she did:

Twice baked sweet potato, you are hands down my new favorite meal. HANDS DOWN.

When Sean got home and crawled into bed and asked me how my night was I told him I made the best meal ever. And then I spent 15 minutes describing its goodness while he told me he hated me for making the best meal ever while he was gone. LOVE YOU HONEY!
